Oh what a treat Lia’s brought us today: DAY 6: Gingerbread and Saffron Ice Cream Cake

Believe it or not, despite how wonderful this far-away-life sounds, Lia was born and raised in Sweden but, she shares that at this time of the year she misses a little snow and came up with this wonderful idea to bridge her worlds and share her inspiration with us: Gingerbread and Saffron Ice Cream Cake is a perfect idea from our “A Swede in Australia.
The countdown to Christmas is on! And my sweet tooth, which is never truly under control, is very happy about that. With Christmas comes a lot of baking, organizing and present shopping and for us here on the farm it’s also harvest time. It’s a very busy time of the year and with my “A Swede in Australia” inspired Christmas ice cream cake full of saffron and gingerbread I want to give you a treat that takes no time to whip up but still will be a highlight on the Christmas table.
