Hello friends! I’ve missed you. I can’t believe how hard it is to keep up with everything while the kids are home on their 2 week Winter Break. I do feel so lucky, though. I’ve just returned from a visit to London with our oldest son. It was an amazing trip with such special memories! This is the second Mommy- London trip, that I’ve pulled off with just one child, while our other two kids did special things with Dad! (Click, here, for a little of last year’s trip with our youngest.) Have you ever taken a trip or planned something special with just one child? I think it’s such a gift!
We’re now back in Sweden and have returned to snow flurries! Since we’re full of winter plans this week, we’re loving the snow, too!
Our neighborhood is so beautiful today that I want to share a glimpse and a very, easy, favorite coffee cake recipe. Just follow below for more photos and for my Mother’s Coffee Cake Recipe below:
I promised fresh baked goods to the kids this morning and remembered this simple coffee cake of my mothers. I always loved it — morning, noon and night — perfect with morning coffee, afternoon tea and warming cups of hot chocolate, too — which we needed after our seaside morning tour. Plus, easy enough so that I can maintain this vacation feeling for myself, too. (These scones are up tomorrow).
No morning alarms this week, but, we do live with two early risers so I can feel like our house is never really completely quiet. I loved the talk, ideas, energy and company as we started the day so nice and slow. We dressed all cozy for a neighborhood walk with Henry, while big brother caught extra sleep and returned to bake together and later, messed up the kitchen table, again, when we all made some projects.
Mom’s Coffee Cake
2 1/2 C Flour
3/4 C Sugar
1/2 t Salt
1 C Brown Sugar
1 t. Cinnamon
3/4 c Vegetable Oil
1 t Baking Soda
1 Cup Buttermilk
1 t Baking Powder
Prepare 2 loaf pans with baking paper. Pre-heat oven to 350 F.
In a mixing bowl, combine dry ingredients and add oil. Take out 1/2 C of this mixture and reserve as topping. Once the topping has been removed, add buttermilk, baking powder, baking soda and eggs. Beat on high speed for 4 minutes. In prepared loaf pans, pour batter into pans. Sprinkle topping over the tops of these and bake for 45 minutes or until a tester will come out clean. Cool and enjoy.
