We never even have just one crumb left when we make these. (Yep, even the crumbs are that good.) There is just something about this recipe — it’s somewhere between a crumble + a granola bar— and it just flies out of our house. Full recipe and photos below.
Hi! When we meet here at willowday, I like to share projects and dishes that you can actually make — hopefully right away without special orders. Although many of the treats I’ve already shared can be made by kids, I’m started a new label called Kids Bake: These Blueberry Oatmeal Bars (aka our granola bars) are #2 in the Kids Bake series! Yesterday, I snapped a few shots as I made these blueberry oatmeal treats with a double surprise in mind: 1. after school treats and 2. a quick trip to the beach (here on Instagram) Our weather is suddenly so beautiful, I just couldn’t resist. Blueberry Oatmeal Bars
2 Cups Oats (or alternative: *Spelt Oats)
1 1/4 Cups Flour (or alternative: *Spelt Flour)
1/2 Cup Sugar (or alternative: *Agave)
1/2 t. Cinnamon
1/4 t Baking Powder
1/4 t. Salt
1 t. Vanilla
1/2 Cup Butter (or alternative: *Cocoa Butter)
1 Cup Blueberries
– Alternative #2: Blue berries Preserves for a firm granola type bar
– Alternative #3: 1 Cup Blueberries + 3T apricot preserves for a slightly more firm bar
Preheat oven to 375 F. Line the bottom of a 8 x 8″ pan with baking paper. In a large bowl, combine oats, flour, sugar, cinnamon, baking powder, salt and vanilla. Mix well. Add butter and cut into the dry ingredients. If you don’t have a cutting tool, use two knives to chop the mixture until it resembles course meal and is no longer dry. Don’t over mix, though — it should be combined just to this point.
Take 1/2 of the oatmeal mixture and press firmly into the bottom of the pan. Bake until the edges are lightly browned — about 10-12 minutes. Remove from oven and top with blueberries (*or blueberry preserves to make a firmer bar that more resembles a granola bar.) Once the berry layer has been layeredd flat, sprinkle the bars with the remaining oatmeal mixture.
Bake until the topping just browns — about 20 minutes. Once brown, remove from oven and cool. Cut into bars. These may be left at room temperature or chilled. Enjoy!
(* Ingredients in ()’s are for a healthy alternative! We love these substitutes equally and I find the the coconut butter flavor is perfect with the oats. Either way, delicious. We hope you find so, too!)
